A Thai Airways International flight from Kunming to Chiang Mai packed with a large group of Chinese students has become a familiar scene to Thai frequent fliers boarding the same flight. They know these Chinese boys and girls are coming to study Thai in Chiang Mai. The Chinese youths are preparing themselves for future careers in trade and tourism, developing potential links among other ASEAN countries from Thailand and China.

After spending some 35 years working in management for major international engineering and construction firms, Steve McCarthy decided to retire to the beauty of South East Asia. After much traveling and searching, he has settled for the unique charms of Chiang Mai, in Northern Thailand. An elegant American man in his sixties, Steve has found and embarked on many local causes, to occupy his time. Besides being deeply involved in a Child Development Center for undocumented orphans from neighbouring countries and “babysitting” a guest house for friends, Steve has also managed to have found fame in silversmith, much to his surprise.

Contemplating the endless variety of small and large tarts, parfait dishes, frozen molded, petit fours, small and large cakes, holiday, party and wedding cakes produced by Chef Fabrice Leblus, one is reminded more of time-consuming artistic creations than pieces of dessert that are popped into one’s mouth, thus destroying these magical visual delights. From the bite-size pastries to the splendid special party and wedding cakes, one has to appreciate all the know-how, efforts and loving care that go into what a normal customer takes so much for granted.

The most striking thing about Dave Besseling when you meet him is the magnificent display of intricate tattoos on his arms and legs disappearing deep into his clothes. We encountered by chance, at one of the innumerable quality guest houses within the Old Chiang Mai City limits. I could not help but approach him to inquire about the significance of the designs imprinted on parts of his body. Dave was most affable and open to my curiosity and as it turned out, the tattoos were just the tip of an iceberg lurking underneath.

During the March 9-11 Doi Angkhang Gourmet Tour, Chef Gianmaria Zanotti was one of the two chefs showcasing the event. As owner and operator of many famous Italian restaurants and carry-out pizzerias in Bangkok, Chef Zanotti’s reputation indicated promises of some of the most exquisite Italian cuisine.
